  • 500g boneless chicken breast, cut into bite-sized pieces

  • 4 garlic cloves, finely minced
  • 1 medium onion, finely diced
  • 2 red chillies, deseeded and finely chopped (adjust to taste)
  • 800g passata (or crushed tomatoes)
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red chilli flakes (adjust to taste)
  • 2 limes (zest of both, juice of one)
  • 15g fresh basil leaves, torn
  • Salt and freshly ground black pepper, to taste
  • 50g grated Parmesan cheese, to serve
  1. Step 1

    Bring a large pot of generously salted water to a boil. Remember, your pasta water should taste like the sea – this is your first opportunity to season the pasta itself. While waiting for the water to boil, prepare the rest of your ingredients.
  2. Step 2

    Season the chicken pieces with salt and pepper. Heat 1 tablespoon of olive oil in a large, deep frying pan over medium-high heat. Once hot, add the chicken pieces, making sure not to overcrowd the pan (cook in batches if necessary). Cook for about 5-6 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature of 75°C). Remove the chicken from the pan and set aside.

    While the sauce is simmering, cook the penne pasta in the boiling water according to the package instructions, usually about 9-11 minutes for al dente. Before draining, reserve about 120ml of the starchy pasta water.

    Return the cooked chicken to the sauce and add the zest of both limes and juice of one lime. Stir gently to combine and warm the chicken through. Taste and adjust seasoning if needed – this is when you can add more chilli flakes if you want extra heat.
  7. Step 7

    Drain the pasta and immediately add it to the sauce. Toss everything together, adding a splash of the reserved pasta water as needed to loosen the sauce and help it coat the pasta. The starchy water will help the sauce cling to the pasta and create a silky texture. Continue tossing for about 1-2 minutes.

    Remove from heat and stir in most of the torn basil leaves, saving some for garnish.
